The Best (and ONLY) “Kitchen” Tool Needed For College Students (or anyone short on time & space) – and eggplant recipe

I wanted this last year, but our dorm rooms didn’t allow it :/

I present to you…. THE MINI INDOOR GRILL (or, Panini press, or waffle maker, etc.)

My dad came to visit for my race last weekend, and brought me one. I got to using it right away to satisfy some eggplant cravings Open-mouthed smile It was super simple too! You just gotta wait for it to heat up for a bit, and there’s barely any clean!
You can cook SO much in it, depending what you have. here, a Panini press is pictured. I used to make KILLER hot sammies with bread stuffed with leftover bean salad. Have a waffle maker? Make waffles! Either double as a mini indoor grill, but a mini grill probably would hold waffles very well Winking smile Have at it!

Easy Grilled Eggplant

Ingredients:
– 1 medium sized eggplant
– spices: ground ginger, red pepper, roasted cumin
– splash of balsamic vinegar

Instructions:
1. plug in (and turn on if necessary) your mini grill. they usually need about 5 minutes.
2. meanwhile, cut your eggplant into about 1/2” rounds
3. squish eggplant onto grill. a little overlap is okay but not preferable.
4. drizzle/drop a bit of balsamic onto each piece, and then cover liberally with each spice.
5. cook for about 7 minutes on one side (depending on your grill), then flip and cook about 2 minutes on the other side.
6. plate, and add the next batch onto the grill! Enjoy!

what’s your favorite kitchen appliance? I miss my blender Sad smile but this makes things SO much more manageable. actually take that back, I miss my SINK. but that’s a WHOLE other story…
