Happy What I Ate Wednesday folks!, a day where bloggers and foodies alike share a day of eats. It’s been a while since I’ve don’t one, but I keep on reading!
Today, though, I’m not sharing a *full* day. Just dinner/evening meals- the interesting stuff and the stuff I was able to take pictures of! I’ve been doing my best to stay W30, but I’ve still been eating some peanuts and corn crackers. Not gonna stress it, I’m trying to keep in the mind set! Besides, I finished the corn chips so I can’t really have any more!
Anywayyys. I finally got around to cooking myself a full meal! I’ve moved, and have an apartment style dorm with a kitchen! And a nice big(ish) room to myself. It is appx. 10×14 ft., where last semester, I think it was like 8×10!
Sunday night, I made brussel sprouts & went to chipotle with a friend. Last night I had a salad + food I brought from home. Today, I cooked and prepped!
I had Quidditch
I had Quidditch from 5-7, and we did a good bit of running. and SUICIDES. brutal. it spiked my HR and revved my metabolism, though!
as I was cooking, I snacked on a lot of carrots (bag on the left) dipped in sun butter, some salsa; + half an apple and strawberries I picked up on the way back to my room.
ground chicken (*sigh* dads.) cooked with murgh masala (and Indian chicken masala, with chili, cumin, coriander, ginger, garlic, and more)
1/2 a bag of brussels in some balsamic
so, funny story with the greens! I LOVE the collards from WF hot bar. It collards stewed and cooked down with minced garlic, onion, and red wine vinegar, and I’ve made a replica at home a few times. I picked it up from the refridgerated case to bring to school, and it was different! Not cooked down, with huge chunks of onions and about 8 whole cloves of garlic! Someone was in a rush. I dumped it in a pot with a bag of frozen kale, and about 1/4 cup of diced (canned) tomatoes, some balsamic, cumin, red chili flakes, and water, and let it cook for 20 minutes.
Yum! It’s about 2 servings for moi.
dinner was: HUUGE salad (it’s a collapsible bowl! love it!) with about 1/3 of the container of salsa (my favorite!), a lotta nooch (added post pic with turmeric, cumin seeds & black pepper),
the greens + all the brussles, half of a HUGE white sweet potato, and ~ 4oz of chicken. YUMMS.
Seriously though, that sweet potato. I bought it from MOON, as I already have tonns of purple from Trader Joes & the Worthington Farmers Market trips. It was advertised as “low glycemic”, so I thought I’d pick up another. It was HUGE. Like, the length of the salad bowl, and the width of the container of greens. Delicious topped with cinnamon & chili powder!
since of course I was still feeling snacky, I waited a little bit and drank some Kevita (a probiotic drink, it’s eh. it’s got a bit of an aftertaste,which I think is from the stevia, but besides that I like it! It doesn’t have any sugar added, just a bit of stevia), then decided on some 100% dark chocolate (I got 5 discs, then 5 more..) some dried fruit & trail mix…. annnnd then half a Vega bar.
See, full dinner, full snack. Not hungry, but mindless munching while working. I’m trying to cut it but at least last night it was all good food not chips/pretzels, or sweetened dried fruit, which at home I walk around and grab when I’m bored.
Progress, people!
And, it was all W30 food (even though W30 doesn’t encourage snacking!), until the Vega bar :/ I guess Quidditch had me extra hungry!
