Welcome back for another Week in Review! Where I share my workouts for the week, goals for next week, and recipes I’ve been making and foods I’ve been eating.
I’ve been trying to update some old recipes, check out these granola bars: Yogurt Coated Tart Cherry & Pistachio Oatmeal Bars. Coming tomorrow, a some more blueberry muffins. Coming soon, some updated enchiladas, and more muffins!

Here’s what this week looked like- Week of June 5th:
Su: woke up unexpectedly late (12 noon! ) eventually got my but up and got in a workout at the Y! Got in some squats and other stuffs. Then a late first meal at Alchemy… at 3pm. Oops.
M: OTF
Tu: Yoga, 50 min power heated.
took a new class with a new instructor and loved it! lots of hip openers and shoulder openers.
W: OTF
Th: Yoga, 50 min power heated. same as Tuesday!

Su: Yoga Rx Meltdown, Myofascial Release Workshop
This was an awesome workout, and even better, led by my favorite instructor! We got Therapy Balls and spent about an hour & a half rolling and massaging out our kinks and muscles, and boy oh boy was I in need of it. my shoulders, right hip, and left hammie/IT/glute were so tight (so basically my whole body lol)
I learned so much, and hope to learn more about myofascial release soon!
A key takeaway though: When rolling out kinks, massaging may feel great, but holding the ball (or whatever you are using, i.e. foam roller, hands) on the knotted muscle may be better. The research is ongoing, but it looks like holding the ball on the tight spot for an amount of time before releasing it does more good than massaging alone. So I’m going to be sure to continue trying that!
Other Awesome Eats this week:
Sunday night- Made this awesome baked tofu for my dad and I. Added some extra paprika and chili powders. It was spicccccy but he loved it!
I also made these tacos from Gena @The Full Helping. I made some modifications and they turned out to be the BEST refried beans ever!
Tuesday my dad and I went to our towns’ Farmers Market. It’s small, but close enough that I can walk to which is awesome! Then my mom, step dad, and I went to the Kitchen for Taco Tuesday!
I’ve heard about them for a while and we were all stoked to go! Every Tuesday they open up the space as a pop up restaurant, and the menu is different each week.
Thursday evening, an old friend from high school had several of us over for dinner! It was awesome to see several friends I hadn’t seen in 2 years, from all different grades! And of course, good food! I brought these blondies for dessert, to which I added some more fruit butter and molasses. From her, I had some grilled zucchini/squash, broccoli, and potatoes, Egyptian red lentil soup & salad. She also had corn casserole, meat pie, and tacos.
Goals for next week:
Well, it will be tough getting ready to go abroad! I’ll be studying abroad in Italy, leaving this Saturday. I’ll be gone for 8 weeks. AHHHH.
I have 3 days of OTF (and for Fathers Day, they have “Dad’s Week”, where dads can come free all week. So I have my dad & step dad going one day!), and 2 days of yoga, and hopefully a run Saturday morning!
Have you been to Italy? I’ve been to Rome before, but this time I’ll be in Florence. If you have any weekend travel recommendations, I’m all ears!!

– Blackberry Mojito Overnight Oats!
– Golden Snitch Bites. (Okay Turmeric Bites). Hopefully I’ll be able to make it before I leave!
– Besan Crackers. Also making a few batches before I leave!
– No Bake Mocha Almond Bars
– Sesame Cucumber Noodles. Perfect for summer! I need to try this, light and refreshing.
