Strawberry Cookie Bites


higher protein cookie bites made with (you guessed it!) beans. Naturally fruit sweetened, these make a great post workout or anytime snack on their own, or as part of a bowl.

Guess what everyone, I’m not a part of the Recipe Redux! Woot! What is it? The Recipe Redux is a link up with Registered Dieticians and health minded food bloggers, sharing recipes each month based on a theme.

At first, I was actually a bit bummed. I wanted to get a surprise ingredient list of theme and be challenged to make something new. I never really try to post recipes by other bloggers, because I don’t know how much “adapting” is enough. But then, I had a whole new challenge of thinking of a recipe to tweak!

But what to tweak? Most other recipes I make are already pretty awesome, so I had a hard time narrowing it down. Then I tried to think of a recipe that I already tweaked a bit- and I remembered

Kaila’s Strawberry “Cloud” Cookies! I made them with modifications I had at home, and while they first turned out, um… questionable…
I made some more modifications to the next batch and they turned out awesome! I adjusted the ingredient proportions, baking time and temps so they didn’t burn, and the best part- the shape!

These cookies are much smaller. Remember the little cookie crisps kids love? Imagine those. Pick them up, and you have have a two-bite-size snack that you keep going back for. One batch goes in 2 sittings, so feel free to double it up!

I like to have these as a snack, or crumble a few broken ones into yogurt. Take a few, or take a batch of crunchy ones and use it in/as your cereal.

It’s be a perfect snack on it’s own, or add it into a trail mix or snack plate. Enjoy!
