A mix of fall and summer flavors, this pear fruit salsa is the perfect topping to any main meal as we enter fall!
Hello from FNCE!
This year, I’m attending the 2016 Food & Nutrition Conference & Expo in Boston! FNCE is the conference to be at for all Registered Dietitians, and I feel so lucky to be able to come here an an undergrad! There are about 12 girls here from my school, along with a few professors, and many, many alumni!! A recap of FNCE will be up next weekend (hopefully, with 2 exams this week and next! ), enjoy this delicious recipe, while stuff myself with samples
While apples are the “fall fruit”, pears need some luuuurve. I used to LOVE eating apples, but when they started bothering my stomach and I figured out the FODMAPs thing, I turned to pears, which didn’t upset my stomach! A pear a day keeps the doctor away?! idk. But they taste darn good.
Now, there are a few main types of pears we get in the US, I mostly find Bartlett, Anjou, and Bosc. Here, you want to use Bosc, because it is nice and crisp! (though I’ve also found Concord & Seckel, which would both work!)
Pears here are paired with (lol no pun intended) a little apple for fall fruit fun, then paired with the sweet vegetable fruits- cucumber and tomato! Mix the fruits with a bit of lemon juice before combining it all together, and top it or use it as a dip!
