Hi all! How’s your week going? Ours went from snow… to 60’s & 70’s… back to sleet and snow! The grey has had me craving warm, hearty bowls, and that’s what I’ve been trying to do! I think it’s a continuation of the hearty, creamy, hummus theme!
But really, the savory craving has been strong lately. Really strong. Mainly, some Shagbark! Their chips/mini corn crackers are the best things everrrr. Dipped into salsa or thick yogurt, they’re lightly salted, and flash fried, so they’re not greasy or oily at all! You really taste the corn and lime.
Okay, I guess this is a continuation of the Shagbark/corn craving haha.
Anyways, the plan was to make some chips with the huge Nuts.com haul I got, but decided to go with polenta! I’d never made it before, but I’ve tasted it a few times (at WF or from a family members dish at a restaurant I think), and it was worth a shot!
I didn’t want a super duper carb meal, so I got a bunch of frozen zucchini out of the fridge and mixed it in! It was perfect, veggies in the main dish!
