WIAW ( + VEGFEST & upcoming recipes!)


Happy WIAW folks! It’s been a while, but my days are chaotic, I eat at weird times, and don’t get photos. Of all days, I didn’t think I’d document a Thursday! Thursdays are my only early class- 8:30 am Food Lab. It’s a very unpredictable day because I usually don’t eat that early, let alone most of the food we make,

In lab, we test different variables of foods and recipes. i.e, what does changing the amount or type of flour, sugar, or fat have on a cookie? What’s the best way to prevent this fruit or vegetable from oxidizing? After the first few labs, I started feeling really iffy from all the sweets, so I try and limit it now. BUT do you ever feel not-hungry but eat only a little, only to feel hungrier? Yeah that’s what usually happens and my day is all thrown off because of timing and feeling blah and not enough sleep and no workout and what not, lol.

But annnnyways, last Thursday, we made pretty awesome meals, so I left very satisfied, and with (extras for) dinner! I also accidentally slept in on Wednesday, and was doing yoga instead of the gym on Friday, so I was determined to go on Thursday. I usually go in the mornings because I have a sensitive stomach and hate working out when my stomach isn’t empty, so I had to be careful for that!

Meal 1 was several pieces of tofu and a small plate of rice with a a few pieces of broccoli.
Then I walked around sampling everyone’s, had a large piece of tofu, 2 ladles of gnocchi, some tofu stir fry, a bit of dressed salad, kale and asparagus, and a lot of strawberries

I worked in the building for a while, before heading back to my room to re-charge my laptop and type up the post. Meanwhile, I ate a small ripe banana, several apricots and a small handful of trail mix.

Finally, at 5, I was off to the gym! I did the arm workouts from week 2 of TSS. The dips got to me, oomph! I had to run to a Quidditch meeting after and didn’t know how long it would last but COULDN’T FIND MY VEGA! I know I sound like a protein buff, but I always have it after my workout. I was getting late so I had to leave without it :/

After the meeting I ate an amazingly delicious orange in the car as I drove home and talked to my dad (some multitasking, eh?) and pondered dinner. After seeing this eggplant-sweet potato breakfast hash I’ve been craving eggplant but didn’t have any!

But then I remembered I had some frozen roasted eggplant! So I made some quick baingan burtha!!

I sautéed a few spoons of diced red onions (I buy diced red onions, then freeze the pack. I love cooked onions buy raw onions make me sick, even smelling them, so this works so well!) with some garlic, then added cumin, turmeric, salt and pepper and chili pepper and some more spices, then added maybe 3/4c of peas.. Meanwhile I warmed the eggplant (2 heaping cups) with a few grape tomatoes, added to the pan with more toasted cumin, and cooked for several minutes to char.

Had half of that with most of my leftovers, and a salad (some spring greens, mixed with leftover salad, dressing, and some kraut, and more tofu bc proteeeein (but really bc it’s nummy (noms + yummy Winking smile ) )

I did some more work and then went again to search for my Vega sport protein. Guess where it was? EXACTLY WHERE I LEFT IT. In the same bag that I store some go-to items, it just blended in with the bag. I found it the 3th of 4th time I looked there, of course. And while I looked, I snacked on some (5 or 6) dates. So yummy! I picked up a few types of dried fruit by this brand from TJ Maxx, and they’re infused with a bit of water so they’re extra juicy, which would make then perfect for baking! I had about 5 then finally made my shake (1 scoop Vega berry + 1/2 scoop Vega natural + 12 oz. water, sometimes a lil milk instead (which I did today!)). But I only had a few sips. I usually mix up a a big one like this and drink it over 2-3 days after workouts.

I had a small handful of trail mix and some dried fruit (a mix of goji berries, raisins, pomegranate seeds and more I think) about an hour later, like 11ish?, then went for a walk around 12, then went to bed! I always go for a walk before bed,, sometimes short or long, but it calms me down Smile I usually eat late, which I don’t like to do, but I do anyways while studying, so taking a shot of ACV (which actually, I haven’t done in a while..) + walking before bed really helps me digest my food so I can feel a bit more comfortable!

so I had said I wasn’t planning on going to VegFest, but due to some changes, I’m able to go! So if you’re around Cleveland, Ohio, this weekend, stop on my!
