Ginger is definitely one of my favorite spices, riiiiiight next to cinnamon. I use it in just about everything, since it’s good in sweet and savory food!
One of the reasons I love ginger is because it aids in digestion and helps with upset stomachs, which I get often *cough IBS cough *sadface* * I also get sea sick, and it works wonders with motion sickness, as it helps ease nausea and all associated symptoms
I also like to make ginger tea in the mornings, and sometimes at night, after meals, or just for a pick me up during the day!

Here, I’ve made ginger cookies! There are 2 types of ginger cookies: soft, fluffy, and chewy; and thin and crisp! These are the former, due to the lack of butter, and are what I prefer for a soothing treat. (I made the crispy kind last year, but didn’t write a recipe down. But, I’m eyeing THESE from Emilie Eats! how could you not!)
They’re soft and fluffy, almost similar to a pancake or bread, but not- haha. They’re amazing out of the oven, and only lasted 2 days in our house. Or 24 hours. Hey, it’s a small recipe! As you can see, I got a bit lazy with the cookie shape part… but that doesn’t matter as long as they taste good, right?
I’ve also used aquafaba here, which is the brine used to cook beans! you can use it from home cooked (from dry) beans, or from canned beans (ingredients should be only beans + water, or beans + water + (some) salt). This Facebook group is super helpful!
1c + 2tbsp sprouted spelt flour*
1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp dried ground ginger
1/4-1/2 tsp cinnamon
1/8-1/4 tsp cardamom
1/2” chunk fresh ginger root, grated
4 tbsp aquafaba (egg replacer- the bean cooking liquid)
2 tbsp molasses
1/4c applesauce (1 small container)
and here’s me enjoying 1 (or 2…) with a cup of ginger/cardamom infused black tea
