Tagliatelle with Vegetables & Tempeh


Silky tagliatelle is paired with a spicy arrabbiata sauce and summer vegetables, perfect for a quick meal, or hosting guests.
It may also be much healthier than tagliatelle you’d get at most restaurants, so eat up!

So, this recipe is long overdue.

This was the first dish I cooked while living in my apartment in Italy. THE FIRST! That was such an important day.

I felt so special. So proud of myself. SO ADULT. You know that feeling, don’t ya? (does thinking that make me actually not an adult? hmmm.) AAAAAND I was so excited to share this with the world, because it was so darn good. And so darn easy. Did I mention, SO DARN TASTY?!

It was also so, so simple. I actually used leftover tagliatelle from dinner the night before, since we hadn’t bought too many groceries yet. Later on during the trip though, we even got to make fresh tagliatelle a few times. Pasta is super fast to make, and even faster to cook. It just takes about 3-5 minutes! What takes the longest is actually sautéing the vegetables. After that, you’re all set to go!
